Pumpkin Blondies

A fall dessert everyone will love!

Ingredients:

  • 1/2 cup unsalted butter, room temperature
  • 1/4 cup brown sugar
  • 1/3 cup granulated sugar
  • 2 tsp vanilla extract
  • 1/2 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 2 tsp pumpkin pie spice
  • 1/2 cup white chocolate chips

Preheat oven to 350.

In a stand mixer, cream the butter with both sugars. Add vanilla and pumpkin puree. Mix until just combined.

In a separate bowl, combine the flour, salt, baking powder, baking soda, cinnamon, and pumpkin pie spice. Add to wet mixture and mix until just combined.

Remove bowl from mixer and fold in the white chocolate chips.

Line a 8×8 or 9×9 inch pan with parchment paper, or spray with non-stick spray. Press dough evenly into the baking dish.

Bake at 350 for 25-30 minutes or until edges are brown and it’s baked in the center.

Allow the dish to cool before cutting into squares.
